Easy Yummy Goodness

Here is a recipe from a good friend of mine for super easy peanut butter cookies (that just so happen to be gluten free, if you are interested):

1 cup peanut butter
1 cup sugar
1 egg
1 tsp. vanilla

Roll into balls, press with a fork and bake at 350 for around 8 minutes. Press chocolate into cookie after baking. I recommend leaving the cookies on the sheet for 5 minutes or so before moving them to a cooling rack (or the counter.)

While we're on the topic of recipes, here is my current favorite bread recipe:

Raisin Bread


Combine and set aside:
2 Tbsp yeast
1/3 c warm water


Meanwhile, mix and scald:
1 1/2 c milk
1/3 c sugar
2 t salt
1/3 c butter


Add to milk mixture:
3 c flour (I use whole wheat)

Add to milk/flour mixture:
yeast mixture
2 eggs
1 1/2 c raisins
1 1/2 c oatmeal
2 1/2 - 3 c flour (again, I use whole wheat)


Knead well
Cover in greaseb bowl, Rise til doubled
Divide, cover, let stand 10 min.
Roll out into Rectangle
Sprinkle with sugar and cinnamon
Roll into loaf
Place seam side down in greased and floured pan
Cover 45 min

Bake at 400 for 10 min
Bake at 375 for 35-40 min
